 2 cups rolled oats, blended (or 1 1/2 cups oat flour)
 2 apples, diced
 1 cup rolled oats
 2 eggs
 1 cup shredded unsweetened coconut
 1 ½ tbsp ground cinnamon
 2 tbsp honey
 1 tsp baking powder
 1 tbsp coconut oil, melted

Preheat oven to 350°F.

In a food processor or blender, process 2 cups rolled oats on high until they turn into a fine flour, about 1 minute. Add diced apples and process for an additional 10-15 seconds.

In a large bowl, combine oat flour, apples and all remaining ingredients. Stir well. Transfer mixture to an 8x8" baking dish greased with coconut oil. Bake for 20 minutes, until golden brown. Cool slightly and cut into squares to serve. If desired, top with yogurt or milk and raisins. Enjoy!
