Apple-Raisin Muffins

Apple-Raisin Muffins
Yields18 Servings
 1 ¾ cups whole wheat flour
 ¾ cup ground flax seed
 1 tsp baking powder
 1 tsp baking soda
 ¼ tsp salt
 2 eggs
 1 cup yogurt
 ¼ cup honey
 1 tbsp butter or coconut oil, melted
 1 tsp vanilla extract
 2 cups apple, finely chopped
 ½ cup raisins
 ½ cup walnuts, chopped (optional)

Preheat oven to 350F.

Combine dry ingredients (flour, flax, baking powder, baking soda, salt) in a large bowl and stir with a whisk.

In a separate bowl, lightly beat the eggs and then add the remaining wet ingredients (yogurt, honey, butter or oil, vanilla) and whisk to combine.

Pour wet ingredients into bowl with dry ingredients and stir just until combined and no dry flour remains. Fold in apples and raisins and walnuts, if using.

Spoon batter into greased muffin tins. Bake for 20 minutes or until toothpick inserted in center comes out clean. Enjoy!
