Arugula Salad with Balsamic Vinaigrette

 ½ cup balsamic vinegar
 2 tsp Dijon mustard
 2 tsp fresh lemon juice
 1 cup extra-virgin olive oil
 salt and pepper, to taste

Whisk vinegar, mustard and lemon juice together in a small bowl. While whisking constantly, pour in the olive oil. Add salt and pepper to taste and mix again. Serve with local greens and enjoy!
