Banana Flax Muffins

Banana Flax Muffins
Yields1 Serving
 2 cups whole wheat flour
 9 tbsp ground flax seed
 1 tsp baking soda
 ½ tsp baking powder
 1 tsp salt
 3 very ripe bananas
 1 egg
 ½ cup honey
 1 tbsp vanilla extract

Preheat oven to 350°F.

Combine flour, flax, baking powder, baking soda, and salt in a bowl. Whisk to combine.

Mash the bananas in a large bowl. Add the eggs to the mashed bananas and whisk to combine. Add the honey and vanilla and whisk again. Gently mix in the dry ingredients a little bit at a time until just combined. Be careful not to overmix.

Spoon batter into muffin cups and bake for 20 minutes, or until a toothpick comes out clean. Enjoy!
