Caramelized Peaches with Bourbon-Spiced Honey

Caramelized Peaches with Bourbon-Spiced Honey
Yields6 Servings
 6 ripe peaches, sliced in half and pits removed
 ½ tsp ground cinnamon
 ¼ tsp ground ginger
  tsp ground cloves
  tsp ground nutmeg
  tsp fine ground sea salt
 4 tbsp unsalted butter
 ¼ cup coconut sugar
 2 tbsp bourbon
 1 tsp vanilla extract
 vanilla ice cream, for serving (optional)
 fresh mint sprigs, for serving (optional)

In a medium bowl, toss together the peaches with the cinnamon, ginger, cloves, nutmeg, and salt. (If not cooking immediately, also toss peaches with fresh lemon juice to keep from browning.)

Melt butter and sugar together in cast iron skillet over medium heat, allowing the mixture to thicken and bubble slowly (don’t burn it!). When caramel sauce is hot, place halved peaches on top of caramel, allowing the peaches to caramelize for 5-7 minutes, until golden brown. (If peaches are not ripe, you may need to turn the heat to low, cover the skillet, and cook for longer to soften the peaches.) Remove peach halves and keep warm. Add bourbon to skillet and cook for about 1 minute, allowing alcohol to burn off. Add vanilla and stir. Add honey and warm through.

To assemble, place 2 peach halves cut side up in a bowl. Add a scoop of vanilla ice cream over top of the peaches. Drizzle with the warm spiced honey. Garnish with mint. Enjoy!
