Cranberry-Apple Chutney

Cranberry-Apple Chutney
Yields1 Serving
 2 apples, diced
 12 oz fresh cranberries (3 1/2 cups)
 ½ cup honey
 ½ cup red onion, minced
 1 tbsp fresh ginger, minced
  cup raisins
  cup apple cider vinegar
 1 tbsp orange zest
 2 cinnamon sticks (or 1 1/2 teaspoons ground cinnamon)
 ½ tsp ground allspice
  tsp ground cloves

Combine all ingredients in a large pot. Bring to a boil. Reduce to a simmer and stir to dissolve honey. Cover and cook for 20 minutes. Uncover and cook for an additional 15 minutes, stirring frequently, until thickened. (Keep in mind that the mixture will continue to thicken as it cools.)

Remove from heat and take out cinnamon sticks, if using. Enjoy!
