Cranberry-Apple Pecan Pancakes

Cranberry-Apple Pecan Pancakes
Yields4 Servings
 1 ½ cups oat bran
 1 cup whole wheat flour
 2 tbsp baking powder
 1 ½ tsp salt
 1 tsp ground cinnamon
 ½ tsp ground ginger
 ½ tsp ground turmeric
 ¼ tsp pepper
 2 cups milk (can be dairy free)
 2 eggs
 2 tbsp coconut oil, melted
 1 tbsp maple syrup
 ½ cup dried cranberries
 1 cup apple, diced
 ½ cup pecans, chopped

Combine dry ingredients (oat bran through spices) in a large bowl.

In a separate bowl, combine milk, eggs, coconut oil, and maple syrup. Mix the wet mixture into the dry ingredients and stir to combine. The batter will be very thick. Fold in dried cranberries, chopped apples, and chopped pecans.

Scoop batter onto a preheated skillet or griddle and cook over medium heat for several minutes per side, until golden brown and cooked through. Serve warm and enjoy!
