
4 cups plum, grape or cherry tomatoes, cut into chunks
2 cups cucumber, cut in half lengthwise and sliced thickly
¼ cup capers, drained and rinsed
½ cup feta cheese, cut into 1/2-inch chunks
Greek Vinaigrette
2 tbsp red wine vinegar
2 tbsp fresh lemon juice
1 garlic clove, minced
1 ½ tsp fresh oregano, minced
½ tsp sea salt
¼ tsp ground black pepper
½ cup avocado oil
1 oz feta cheese, crumbled
3 tbsp plain Greek yogurt

Toss together tomatoes, cucumbers, capers and feta cheese in a bowl.

To make vinaigrette, combine red wine vinegar, lemon juice, garlic, oregano, salt and pepper in a small bowl. Whisk in the avocado oil. Stir in feta cheese and yogurt.

Toss about 1/4 cup of the vinaigrette with the salad ingredients. Serve as is or on top of salad greens. Enjoy!
