
Preheat oven to 375°F.
Combine dry ingredients - flour, oats, salt, baking soda, and spices - in a large bowl. In a separate bowl, whisk together the wet ingredients - eggs, honey or maple syrup, coconut oil and diced fruit. Pour wet ingredients into dry ingredients and stir just until combined.
Spoon batter into prepared muffin cups. Top each muffin with toasted coconut and bake for 20 minutes, or until toothpick inserted into center comes out clean. Enjoy!
