Maple-Balsamic Vinaigrette

Arugula Salad with Maple-Balsamic Vinaigrette
Yields1 Serving
 ½ cup balsamic vinegar
 ½ cup maple syrup
 1 small onion, finely chopped
 1 tbsp fresh basil, chopped
 1 ½ cups extra virgin olive oil
 salt and pepper, to taste

Whisk together vinegar, maple syrup, onion, and basil in a small bowl. While whisking constantly, slowly add the olive oil. Add salt and pepper to taste and mix again. Serve with local greens and enjoy!
