Mexican Hot Chocolate Energy Bites

Mexican Hot Chocolate Energy Bites

 1 ½ cups rolled oats
 ¾ cup walnuts (or you could substitute your favorite nut butter)
 ¼ cup ground flax seeds
 ¼ cup chia seeds
 10 pitted dates, soaked to soften and drained (or you could substitute 1/4 cup honey or maple syrup)
 ¼ cup raw cacao powder
 1 tsp vanilla extract
 ½ tsp fine ground sea salt
 2 tsp ground cinnamon
 1 tsp ground ginger
 ¼ tsp ground cayenne pepper

Combine all ingredients in a food processor. Pulse until nuts and dates are finely chopped and mixture is blended together. (If all ingredients are not blending together completely, just pulse until nuts and dates are chopped and then remove the blade and continue mixing by hand.)


[If using nut butter in place of walnuts and honey or maple syrup in place of the dates, you can skip the food processor and just combine all ingredients in a large bowl.]


Spoon one tablespoon of mixture at a time into the palm of your hands and roll into a ball. Place energy bites on a baking sheet and freeze for at least 30 minutes until oats have softened and mixture has had time to meld together. Remove and enjoy!

[Energy bites can be stored in the refrigerator or freezer.]
