Orzo with Fresh Tomato and Mozzarella

Orzo with Fresh Tomato and Mozzarella

 4 garlic cloves, minced
 4 cups fresh tomatoes, chopped
 8 oz fresh mozzarella cheese, cut into small cubes
  cup fresh mint, chopped
 1 lemon, juiced and zested
 ¼ cup olive or avocado oil
 1 tsp salt
 1 lb whole wheat orzo pasta

Combine garlic, tomatoes, mozzarella, mint, lemon zest and juice, oil, and salt in a bowl. Let stand at room temperature for 1-2 hours.


Meanwhile, cook pasta according to package directions. Drain and return to pot. Combine with tomato sauce and stir to mix thoroughly. Serve immediately. Enjoy!
