Peach Muffins

 1 ½ cups whole wheat flour
 ½ cup rolled oats
 1 ½ tsp ground cinnamon
 ½ tsp salt
 ½ tsp baking soda
 2 eggs
 ½ cup honey or maple syrup
  cup applesauce
 1 ¼ cups peaches, peeled and diced

Preheat oven to 375°F.


Combine dry ingredients - flour, oats, cinnamon, salt, and baking soda - in a large bowl. In a separate bowl, whisk together the wet ingredients - eggs, maple syrup, applesauce and diced peaches. Pour wet ingredients into dry ingredients and stir just until combined.


Spoon batter into prepared muffin cups and bake for 20 minutes, or until toothpick inserted into center comes out clean. Enjoy!
