Peach Salsa

Peach Salsa
Yields4 Servings
 4 peaches, peeled and chopped
 1 pt cherry tomatoes, halved (or regular tomatoes, chopped)
 1 jalapeno pepper, seeded and diced
 ¼ cup red onion, finely chopped
 1 lime, zested and juiced
 2 tbsp mint, basil, or cilantro, finely chopped
 ½ tsp fine sea salt (or to taste)

Combine all ingredients in a bowl. Stir gently to combine. Serve with tortilla chips as an appetizer or as a side dish alongside grilled fish or meat, such as pork chops. Enjoy!

NOTES: This recipe is also delicious with watermelon or nectarines substituted for the peaches!
