Pickled Radishes

Pickled Radishes

 1 radish bunch (without greens), thinly sliced
 3 garlic scapes, thinly sliced
 ½ cup apple cider vinegar
 ½ cup water
 2 tbsp honey
 2 tsp sea salt

Pack sliced radishes and chopped garlic in a pint-sized glass jar.


Combine remaining ingredients in a small pot and bring to a boil. Pour vinegar mixture over the veggies in the jar. Cool and refrigerate for an hour or more. Enjoy!

(Keeps well up to 2 weeks in the refrigerator.)
