Slow Cooker Sausage and Barley Stew

 1 lb Italian sausage links, cut into 2-inch pieces
 1 large onion, chopped
 4 carrots, chopped
 4 celery ribs, chopped
 8 oz mushrooms, sliced
 1 tbsp garlic, minced
 1 tbsp fresh rosemary (or 1 tsp dried)
 6 oz tomato paste
 1 cup barley (or you can substitute brown rice or lentils, or any combination of the three)
 4 cups vegetable broth
 1 cup water

Combine all ingredients in a 6-qt slow cooker. Cover and cook on low for 8 hours, stirring halfway through (add up to 1 additional cup of water if necessary). Cool slightly and serve. Enjoy!
