
1 lb carrots, trimmed and sliced in half lengthwise
2 tbsp coconut oil, melted
½ tsp ground turmeric
¼ tsp ground cinnamon
¼ tsp ground black pepper

Preheat oven to 400°F. (Tip: melt coconut oil in oven-safe bowl while oven is preheating.)

Toss carrots in melted coconut oil and spices. Arrange in a single layer on a baking sheet lined with parchment paper. Bake for 20-30 minutes (depending on the size of your carrots), stirring once, until browned and tender. Remove from oven and serve. Enjoy!
