Spinach, Caramelized Onion, and Bacon Frittata

Spinach, Bacon, Caramelized Onion Frittata
Yields6 Servings
 6 bacon slices, chopped
 3 garlic cloves, minced
 4 cups fresh spinach, tough stems removed and leaves chopped
 2 cups red onion, sliced
 2 tsp honey
 12 eggs
 2 tbsp water
 salt and pepper, to taste

Preheat oven to 425°F.

Preheat a large cast iron or ovenproof skillet over medium heat. Add bacon and cook until crisp. Remove bacon from pan with slotted spoon, reserving 1-2 tablespoons of bacon fat in the pan. Add garlic and spinach and sauté just until wilted, about 2 minutes. Remove spinach from pan and place in a strainer, pressing down to remove excess moisture. Add onion to pan and drizzle with honey. Cook over medium-low heat for about 15 minutes or until golden brown and caramelized, stirring frequently.

Meanwhile, crack eggs into a bowl and whisk together with water and salt and pepper, to taste. Set aside.

Add cooked bacon and spinach back to pan and stir to combine. Pour egg mixture over top of cooked bacon and veggies. Cook on stove on medium or medium-low heat for another 5-10 minutes, just until egg starts to set around sides and bottom of pan.

Transfer pan to oven and continue to cook for another 15 minutes, or until egg is completely set and cooked through. Remove from oven and cool slightly. Enjoy!
